Healthy Quick Coffee Cake

(From Better Homes & Gardens with my variations.)

 

1 c. flour                                    3/4 c. Splenda

1/2 c. whole wheat flour              1/2 c. oats

2 1/2 t. baking powder                1/2 t. salt

1/2 c. dry milk powder               

-- Mix above well.

-- In a measuring cup, mix the following ingredients and add to above mixture.

1/4 c. oil                        1 beaten egg

1/2 c. skim milk             1 T. molasses or honey

Mix with spoon.* Pour into 9"x9"x2" pan. .Sprinkle with spicy topping, and if desired nuts, raisin and/or chocolate chips. Bake at 375 degrees for 25 minutes or until done.

 

* If desired may add optional ingredients like

1 c blueberries

or 1 c. chopped apples & 1 t. cinnamon.

 

Spicy Topping For Coffee Cake

 

1/4 c. brown sugar

1 T. flour

1 t. cinnamon

1 T. melted butter
