Passover Orange Sponge Cake
(From Taste of Tradition, Women's American Art)
9 eggs, separated
1/2 c. sugar (beat with the egg whites)
1 1/2 c. sugar
1/2 c. orange juice
1/2 c. matzo cake meal
1/2 c. potato starch
Beat egg whites in a clean dry bowl, beating in sugar when stiff.
In another bowl beat egg yolks with sugar. Add orange juice. Add remaining ingredients. By hand fold in egg white mixture and put into tube pan. Bake at 325 for 40-45 minutes. Invert gently and prop up until cool.
