Low-Fat Quiche

 

Basic filling

 

9" pie shell (oil pie crust with 1/2 whole wheat flour)

equivalent of 3-4 eggs (1 Egg Beater carton)

1 T. flour                        1 1/4 c. skim milk

salt, pepper

2 - 4 oz. grated low fat cheese

 

Mix above well except cheese.  (I use blender).  Spread cheese  and other ingredients. (see below in unbaked pie shell.  Add filling.  Bake at 400 degrees for 30 minutes or until set.

 

Variations  -- before baking

 

Broccoli quiche:  mix 1/2 pkg.(about a cup) cooked frozen broccoli in with egg mixture.

 

Veggie quiche:  Sauté a sliced zucchini and sliced yellow summer squash in some olive oil and garlic. Place on the bottom with cheese.  Add filling.  Place a thinly sliced tomato on top and bake.

 

Sauté sliced mushrooms in a little olive oil and add.

 

Other fillings

-- Turkey Bacon (cooked and drained and cut up)

-- Shrimp (tiny, cooked)

-- Canned crabmeat

-- lowfat sausage, cooked and drained.
