(A good way to use up excess egg whites)
3 egg whites 1 c. sugar
1/4 t. salt 3/4 c. chopped walnuts
3/4 c. chopped dates (or other dried, candied fruit)
Blend egg whites, sugar, salt, and vanilla inn top of double boiler. Place over boiling water; beat with rotary beater until mixture stands in stiff peaks, scraping down sides of pan with rubber scraper. Stir in dates and walnuts. Drop heaping teaspoonfuls of
dough on 2 lightly greased baking sheets. Bake at 300 deg. for 12 -15 min., or until lightly browned.
