Irene's Oatmeal Cookies

(modified from Quaker for softer cookie and less trans-fats)

 

1/4 c. shortening            1/2 c. butter

1/2 c. oil                        2 c. dark brown sugar

1 c. sugar                      2 eggs

1/2 c. water                   2 t. pure vanilla

2 c. raisins                    2 1/2 c. flour                 

1/2 t. salt                      1 t. soda                      

6 c. quick cooking oats

 

Mix sugars, oil & shortenings well.  Mix in egg, water & vanilla.  Add raisins and let sit for a few minutes. Add flour, soda & salt all at once.  Mix well. Add oats, mix and let sit for 10 minutes.  Roll into balls or drop from a spoon onto a greased baking sheet.

 

Oven 350  12 minutes. Makes 8 dozen
