Oatmeal Raisin Cookies w Splenda for baking
(From Splenda - Sweet
Possibilities)
1 c. butter*, room temp.
1 c. Splenda blend for Baking
1 T. molasses 2 large eggs
1 1/2 t. vanilla extract
1 1/2 c. flour 1 t. baking powder
1 t. cinnamon
3 c. oats 1 c. raisins
Oven 350 degrees.
Beat butter and Splenda until
fluffy. Add remaining wet ingredients,
beating until blended. Add flour, baking powder and cinnamon all at once. Stir on top and mix into wet mixture. Stir in oats and raisins.
Drop dough by rounded
teaspoonfuls onto a baking sheet sprayed with Pam. Bake about 12 minutes. Remove to rack and let cool.
Makes 3 dozen cookies.

try to lower the fat and saturated fat by substituting the 1 c. butter with 1/2
c. butter and 1/4 c. oil and see how it comes out.
