Oatmeal-buttermilk Pancakes

 

2 c. quick oats, uncooked          

1 t. salt                         1/2 t. soda

 2 T. sugar                     2 1/2 c. buttermilk

1/3 c. oil                        1 c. flour           

2 eggs, beaten               2 t. baking powder         

3/4 c. chopped pecans

 

Add soda and oats to buttermilk. Let stand 5 min.  Add remaining ingredients and mix.

(note: could omit pecans or substitute with

    fruit such as apples, blueberries, raisins)
