Oat Bran Pancakes w Splenda

(From Splenda - Sweet Possibilities)

 

1 c. oat bran                  1/2 c. flour

1/4 c. Splenda               1 t. baking powder

1/2 t. baking soda          1/8 t. salt

2 c. buttermilk               1/4 c. egg substitute

 

Combine dry ingredients in a bowl.  In a measuring cup beat together buttermilk and egg substitute. Mix together until dry ingredients are just mixed.

 

Heat griddle or skillet to medium high heat. Use about 1/4 c. batter for each pancake. Cook pancakes until puffed (the bubbles are breaking and stable) and brown around the edges.  Flip over and cook until golden brown.
