Double Chocolate Silk Pie

(From Mrs. Fields, I Love Chocolate, modified instructions)

 

1 9" pie shell (baked or crumb)

1 ½ c. cream                             ¼ c. sugar

5 egg yolks                               pinch salt

10 oz. good semi-sweet chocolate chips

1 ½ t. real vanilla extra

 

In a glass measuring cup or bowl, scald cream and sugar in microwave (heat, stopping to stir every 30 sec or so, until it is just about boiling.)  Beat yolks in a microwave proof bowl.  Slowing add the hot cream mixture, while mixing, into the yolks.  Mix well. Microwave 30 sec at a time, stirring in between, until mixture bubbles and thickens. Mix in chocolate chips.  Wait about 5 minutes.  Mix again.  Add vanilla and mix until smooth.  Pour into pie shell.  Cover with plastic wrap (to prevent skin from forming) and chill several hours or overnight.
